Many people stop themselves from making homemade ice cream because they think they need a machine. Yes, it is true that these special machines make delicious ice cream but, believe me, they are not always necessary! 

For example, for this recipe, you will only need a blender and nothing else! The texture obtained is perfectly creamy and the taste is delicious. For this frozen snack, I put forward one of my favorite fruits ... Pineapple! By mixing frozen pineapples with coconut yogurt, you get a piña colada taste and it’s perfect for hot summers like the one we are having right now. 

Plus, I added TAXI juice to the recipe which not only accentuates the pineapple taste, but also adds a touch of apple, lime and mint! Nothing better than this recipe to enjoy a refreshing snack while consuming a good portion of fruit. 

The preparation only takes 30 minutes and the freezing time is only 2 hours since the recipe uses frozen pineapples. Believe me, it’s worth the wait! 

Servings: 4 servings
Preparation: 30 minutes
Freezing: 2 hours

Ingredients 

  • 3 cups of frozen pineapple ?
  • 150g of silken tofu ✨ 
  • ¼ cup of plain coconut yogurt ?
  • ½ cup of TAXI juice ?
  • 1 tbsp maple syrup ?
  • Juice of a lime ?

Optional: Garnish with shredded coconut 

Preparation ?

1. Place all the ingredients in a blender. Mix until you get a smooth and creamy texture. 
2. Pour the mixture into a glass container or loaf pan. 
3. Cover, then place in freezer for a minimum of 2 hours. 

Tip: Take out the ice cream a few minutes before serving. The texture will be perfect after spending a few minutes on the counter.
